We had an impromptu cookout last night. One of those times where the spontaneity of the day turns into something quite special. Amy had come down from Iowa City and we worked on making sure that things were ready for the wedding (In now less than 2 weeks!). She decided that she would stay for supper. 2 phone calls later Amber, Eric, and Candice were going to join us. The day turned into gorgeous, rather than HOT, and we had the best time!
BBQ chicken on the grill, Grandma's potato salad, fresh watermelon, and corn on the cob. I had been intrigued by an item I'd been sent about "cooler corn". Has anyone else seen/heard about that? You simply place the cleaned ears of corn into a cooler, pour boiling water over it, and shut the lid. When you're ready to eat, the corn is ready to be eaten. Sounded way too easy, but I decided to try it. And it was awesome!!! I put the corn in the cooler in the kitchen, poured one large pan of boiling water over it, shut the lid, and carried the cooler out to the patio and let it sit. It sat while the chicken was cooking and we were preparing to eat. Then, when it was time, a pair of tongs dipped the corn out of the cooler. And that was some awesome corn on the cob! Wow!!! I'm impressed. A simple, easy, out of the way cooking method that works awesomely!!! Yummmy!!!
We did eat outside. Like I said, the weather was wonderful! Then, it was game on. We had found our volleyball net the other day, but it was not in good shape. So, Amy and I had to go to the store anyway, and a new volleyball/bad mitten set was purchased. The net was put up in Granny's yard, as the cooking/eating was going on in our back yard. We decided to have a real "beach" party and even filled the pool! : )

All 5 of my kids in the same place. Granny and Candice (and my
grandson!) enjoying a good time. My BFF stopping by the share the joy. That was one of the best times I've had in ages. I love it that we can all get together and laugh and, sometimes, be intense, and just have an incredibly good, good time! And it all goes to prove that spontaneity can give us some darn good, albeit RedNeck-ish, times and memories! I love my family and friends. I am blessed.
